Easy Flapjack Recipe

This is the easiest flapjack recipe I have come across and the recipe is right below. We all know how annoying it can be to have to trawl through whole paragraphs before you get what you are looking for.

INGREDIENTS

  • 4oz Rolled Oats
  • 4oz Self Raising Flour
  • 4oz Butter
  • 4oz Golden Syrup
  • 4oz Chopped Dried Apricots

METHOD

  • Preheat the oven to 180C/350F/Gas mark 4
  • Line a 20cm deep baking tray with greaseproof paper.
  • Mix all the dry ingredients together
  • Melt the butter in a large saucepan
  • When the butter is just melted stir in the dried ingredients and mix well
  • Add the golden syrup and mix until fully incorprated.
  • Transfer the mixture to the baking tray
  • Place in the oven for 15 – 20 minutes or until golden
  • Remove from oven and slice into squares. Leave in tin to cool for 5 minutes
  • Use the paper to lift out of the tin. Place on wire rack until completely cooled

NOTES

  • Instead of Self Raising flour, I sometimes use some oats that I have put through the food processor.
  • Sultanas/Raisins/chocolate chips can be used instead of the apricots in this recipe.

I found it a few years ago and have really enjoyed being able to make a sweet treat that can still be classed as relatively healthy.

I usually switch it up between sultanas and apricots for the fruit and pretty much always use the chopped up oats instead of the flour.

I know it can seem strange as to why I don’t just use 8oz of the rolled oats but for some reason that just makes the flapjacks too chunky for me. I like to have them a bit finer than that.
